Summer Orange Cake

What is better than cake?

A moist, delicious Orange Cake! Plus it is as easy as three main ingredients. ( This is the short and sweet version. Make sure to have fresh oranges on hand, and remove the seeds for safety.


I made this cake for my father's birthday and for a family event . It was a hit and gone with in two days. No one suspected that my secret ingredient was vanilla boxed cake. I had a short window to make a cake from scratch, however this was so exceptional that I will make it again. With this cake was an Orange Cream Cheese Frosting that was to live for.




Ingredients:

1- boxed cake mix

3- fresh washed oranges ( keep 1/4 cup separate)

1- orange sliced for decorations

Eggs ( check package)

1- tablespoon of oil

1- pkg soften cream cheese

1/2- cup sugar

Love :)


Directions:

Boil the three oranges in boil water until soft. Approximately 10 - 15 minutes, drain the water and blend the oranges until it is pulp. See photo below.


Mix cake mix with everything except for the liquid, add the oil, then mix.


Add pulp to the cake mix ( keep 1/4 cup for frosting) and mix thoroughly.

Bake at 350 degrees for 20 - 25 minutes. Check occasionally with the fork test. Let rest and enjoy.


Frosting:

Add cream cheese to a bowl, sugar, orange pulp and whip until smooth. Taste and adjust. Once at the consistency you like. Cover the cake with this deliciousness. Top with orange slices and serve.
